Ahh there you go, here’s some luscious blueberry porn for you guys 😉

20130717-184848.jpg

Plus, it also has a spicy kick to it, which makes the flavour more fun without being overwhelmingly noticeable. This is also very easy to make so don’t be turned off, think of it as boiled fruit 😉

Recipe:

3 cups organic fresh blueberries
2 cups organic unsweetened apple sauce
3 organic medjool dates (pitted and mashed)
1/4 tsp smokey paprika

Place pitted dates in the microwave with 1 tbsp of water and heat up for 1 minute. Mash dates with a fork when ready.

Place dates and remaining ingredients in a skillet over medium-low heat and let it cook for 40 minutes, stirring every 20 minutes.

When ready, let jam cool for 10 minutes before transferring into sterilized mason jars.

Store in the refrigerator or freezer. Keeps for a couple months when stored in the freezer and about 1 month when stored in the refrigerator.

Pancake Tuesday’s anyone? I was craving pancakes this morning and I had to have some, even though i’m trying to ween myself off flour based meals for now so I can kick start my detox, (all the flours I use are gluten free by the way). However, my body wanted some pancakes this morning, so I decided to give it what it wanted! And why not? You have to listen to your body and give it what it wants, because if you don’t, it will work against you at some point. But that doesn’t go without saying that you shouldn’t feed your body processed junk foods, because that will work against you too. You can train your body to crave clean and healthy meals that are just as delicious and more nutritious than junk food. So have these yummy pancakes! I Topped these babies with homemade sugar free spicy blackberry jam and unsweetened coconut flakes. Recipe for spicy blackberry jam can be found on the “sides and others” category my blog (type in “jam” in the search bar and you’ll find it 🙂

Recipe:

2 tbsp organic gluten free oat flour
1 tbsp organic coconut flour
1 organic cage free egg and 2 egg whites
1 scoop gardens life raw vanilla protein powder
1 small organic banana
1 tbsp organic natural peanut butter
1/4 tsp ground cinnamon
1/4 tsp organic pure vanilla extract
2 tbsp unsweetened almond milk.
Spicy sugar free blackberry jam (for topping)

Mix batter together in a bowl and fry on skillet over medium heat with coconut oil (1/4 tsp for each). Top with toppings of choice and enjoy!

I will admit that this photo isn’t so easy on the eyes, but the point is pretty clear! Sugar free/pectin free jam for the win! I’ve been to every natural food store available in my city and all the jams/fruit spreads I found either contained sugar, or was made from concentrate, some even had some added preservatives that I couldn’t pronounce! (If you can’t say it, don’t buy it). So I decided the only way to get the jam I wanted was to make it myself! This recipe is fairly easy, nutritious, and delicious with a spicy kick. Minimize your sugar intake as much as you can, it will help you a great deal 🙂

Recipe:

3 cups organic fresh blackberries (cut in half, or diced for less chunks)
2 cups organic unsweetened apple sauce (or 1 cup of raw melted honey if you want it sweetened)
4 organic medjool dates (mashed)
1 tsp smoked paprika
1 tbsp lemon juice (squeezed from lemon)
1/4 tsp organic pure vanilla extract

Heat a saucepan over low heat and combine all ingredients. Alternatively, you can melt the dates in the microwave before adding it to the remaining ingredients. Add dates and 1 tbsp water or honey in a bowl and melt for 1 minute. Add to remaining ingredients when ready.

Let jam mixture simmer on low heat for 40 minutes.

When ready, let jam cool for 10 minutes. Add jam to sterilized mason jars and keep in the refrigerator for 4 hours (or overnight). This will enable jam texture to form properly.

Spread jam over favorite gluten free bread or treat and enjoy!
