BERRY BANANA CREAM VANILLA CRÊPES WITH DARK CHOCOLATE DRIZZLE (SUGAR FREE)

Hi guys! Look what I had for breakfast! My first crêpe post and it was a successful delight. I apologize for posting so late, I had an early job interview which was successful 🙂 As much as I have a passion for healthy and yummy food, I also have a passion for law, so getting hired at a law firm is a great way to start training for a law career, except Life takes me into a different path, as long as I’m happy 🙂 Have a great day my amigos!

Recipe for Crêpes: makes 8

1 cup gluten free oat flour
3/4 cup organic unsweetened almond milk
1 tsp organic pure vanilla extract
2 organic cage free eggs
1/4 tsp cinnamon
1 tsp pure butter extract
2 organic stevia sachets
Coconut oil (for frying)

Banana Cream:

1 organic mashed banana
1/4 cup organic plain non fat greek yogurt
A splash of organic pure vanilla extract
1/4 cup organic strawberries (diced)
1 organic stevia sachet (or 1.5 tbsp organic raw honey, but it won’t be sugar free)

Dark chocolate drizzle: 5 squares of organic dark chocolate (over 70%. I used 80%)

Combine crêpe ingredients in a bowl and fry over medium-high heat with coconut oil.

When ready, combine banana cream ingredients in a bowl. Place banana cream in crêpes and fold.

Melt dark chocolate in the microwave and drizzle over crepes. Enjoy some crêpe porn.
