PINEAPPLE FUSION SCALLOPS

I have been experimenting with a lot of weird flavour combinations lately, and I have had a few fails, but also a few successful recipes. This recipe was one of my successful experiments, or at least my tastebuds approved 🙂 These could also work as a salad! So come on, step out of your comfort zone and make a habit of trying new things, I mean after all, we only live once right? 😉

Recipe: serves 2

1 cup organic wild scallops
1 pineapple slice + pineapple juice (warm sliced pineapple in the microwave with 1 tbsp of water for 1 minute to make the juice)
1 scallion (chopped)
1 tbsp red onion
A pinch of garlic salt and black pepper
1 tsp coconut oil for frying

Place scallops in a bowl and toss them with garlic salt, pepper, and pineapple juice. Let it sit for 5 minutes.

Heat skillet over medium heat and add coconut oil. Sauté onions, and scallions for about 10 seconds before adding scallops. Sauté both sides until golden brown, this should take about a minute.

Serve scallops with additional pineapple slices and enjoy!
