CHUNKY MANGO CHUTNEY

I’ve wanted to try this recipe for a very long time, and finally, I’m glad I got the chance to. I had an early shift at work today, which meant that I would get off work early enough and still enjoy the rest of the day. So, I spend the rest of my day doing laundry, catching up on the tv shows I missed last weekend (Game of Thrones, The Borgias, etc) and of course creating sexy dishes in the kitchen! 😉 This sweet and savoury Indian dish can be topped on anything like rice, salmon, pasta, or even eaten by itself 🙂

Recipe:

1 tablespoon coconut oil
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1/2 a large red onion, chopped
1 red bell pepper, chopped
2 ripe mangoes, Chopped
Juice of 1.5 limes
1 tablespoon curry powder
1 teaspoon curry powder
1 teaspoon red pepper flakes

In a large frying pan, heat coconut oil over medium heat.

Add garlic and ginger to the frying pan and sauté for two minutes.

Add red onion and red bell pepper to the frying pan and continue to sauté for another minute.

Add the chopped mango, lime juice, curry powder, and red pepper flakes. Continue to sauté until the red bell pepper, onion, and mango have softened. About 5 minutes.

Turn heat down to simmer, and cover with the lid until serving.

Enjoy with grilled Salmon, shrimp, cauliflower rice or any entrée of choice.
