SAVOURY CAULIFLOWER PANCAKE WITH POACHED EGG AND VEGGIES (PALEO)

It’s June, and just a few weeks before summer officially starts! So why is the weather so crappy? Its been raining a lot here in Toronto and it looks like it’s going to rain all week, so boo hoo πŸ™ Anyways, this yummilicious breakfast definitely cheered me up πŸ™‚

Recipe for cauliflower (serves 3)

2 cups cauliflower rice
1/4 cup flaxseed meal
1 organic cage free egg white
1/4 cup diced red onions
1/4 cup diced red bell peppers
2 scallions (chopped)
1 tbsp diced jalapeΓ±os
1/4 tsp black pepper, mrs dash (salt free), garlic powder, and coconut aminos.
Organic coconut oil (for frying)

Place cauliflower in a food processor and process until you get a rice texture.

Place cauliflower rice in a bowl and heat up in the microwave on high for 5 minutes.

Take out cauliflower and add remaining ingredients. You batter should almost look like mashed potato.

Scoop batter with a large spoon (should make 3 portions) into a skillet greased with coconut oil over medium heat. Fry until both sides are golden brown.

When ready, serve with veggies of choice and poached egg. For directions on how to poach an egg, you can find it in my other poached egg recipes. Type in “poached egg” in the search bar and you’ll find it.

    1. Thanks hun! I hope you like it πŸ™‚ Coconut aminos is a healthy substitute for soy sauce. Traditional soy sauce contains high amounts of sodium, sugar, and gluten, even the gluten free and low sodium soy sauce still isn’t the healthiest. Coconut aminos ( or “mock soy” as i call it), is a soy free seasoning sauce which it’s loaded with nutrients, such as 17 naturally occurring amino acids, and it’s seasoned with natural sea salt, which makes its sodium level less than 2% per serving. Sorry for the long essay, I’m just passionate about coconut lol! Hope this helps though πŸ™‚

      1. Awesome – I’m a massive coconut fan too πŸ™‚ I have been trawling through so many brands of soy sauce to find one with the lowest sodium and sugar content. Nice to know that this exists! I will have to get myself some πŸ™‚ Thanks!

    1. Thank you! It’s cauliflower petals that are processed in a blender or food processor. When blended, it forms a grainy like texture so it’s called rice. You can also eat it raw or cooked πŸ™‚

      1. Ahh ok, I use frozen cauliflower a lot. I guess I could cook em quickly and then take the petals off.

        1. The rice texture forms better when the cauliflower is raw, you can cook it after you’ve made the rice, because cooking the cauliflower before blending it might give you a cauliflower mash rather than rice. But hey, then you have paleo mashed potatoes πŸ™‚
