COCONUT CHOCOLATE CHIP COOKIES (AKA ANTI-PMS FORMULA)

Oh Friday, how i’ve missed you. I feel like we have an on and off again relationship, so lets make it official someday 😉 Okay enough of my silliness, but these cookies were amazing! And fairly easy to make as well. It also conquers all my sugar cravings the healthy way, and each piece is very filling, so these will definitely keep for a couple weeks, except if you can’t help yourself of course 😉 Credits for this recipe go to George, who is the creator of www.civilizedcavemancooking.com. Recipe:

1/2 cup coconut oil
1/3 cup organic raw honey
4 organic cage free eggs
1/2 tsp organic pure vanilla extract
1/8 tsp sea salt
1 cup coconut flour
1/2 cup unsweetened coconut shreds
1/4 cup enjoy life’s chocolate chips (dairy free) or any dark chocolate chips of choice.

Preheat oven to 350 degrees F.

Combine all wet ingredients plus sea salt in a bowl and mix until well incorporated. To make it easier, melt raw honey and coconut oil before adding it to the mixture.

Add coconut flour to the mixture and stir until well incorporated.

Add coconut shreds and chocolate chips to the mixture and mould until soft batter forms.

Scoop batter with an ice cream scoop into a baking sheet lined with parchment paper and flatten out cookies into your desired shape. Gluten free batter doesn’t flatten out in the oven.

Bake for 12 minutes or until golden brown.

When ready, let cookies cool for about 10 minutes. Serve and enjoy!
