RED VELVET PROTEIN PANCAKES WITH STRAWBERRY BANANA ICE CREAM FROSTING

Did someone say red velvet pancakes? And healthy? Yup, I sure did! You can still enjoy all of life’s guilty food pleasures without the guilt 😉 Anything red velvet is right up my alley. Here is a closer look at this messy goodness

If you have a love affair with red velvet and pancakes like I do, ride on the bus with me and let your tastebuds be your guide to this recipe.

Recipe:

2 tbsp brown rice flour (or 1/4 cup almond flour)
1 tbsp coconut flour
1 organic cage free egg and 2 egg whites
1/2 a small organic banana
1/4 tsp ground cinnamon
1/2 tsp gluten/aluminum free baking powder
1 scoop garden of life raw vanilla protein powder
1 stevia sachet (for extra sweetness)
1/4 tsp pure organic red food coloring
Coconut oil (for frying)

Place all ingredients in a food processor and pulse until smooth pancake batter forms.

Fry portions in a non stick skillet with coconut oil over medium heat.

Top with strawberry banana ice cream frosting. To make frosting, place 1/4 cup sliced frozen bananas and strawberries in a food processor and puree until creamy ice cream texture forms. To make it more creamy, add 1/4 cup non fat plain greek yogurt.
